GUANTONIO'S

Style of Lodi would like to welcome Guantonio's, Italian Wood Fire Cuisine. We recently interviewed Shelly and Nick Guantone, the owners of Gunatonio's to learn the story behind this unique new catering company. Here's what they had to say:

"Our son Nicholas was cooking at a Restaurant in Berkeley, Ca called "Downtown" on a Mugnaini oven.  He loved the way it cooked the results it created. Each of our 3 kids ( Nicholas , Natalie and Jessica ) , my husband Nick and myself ( Shelly ) , all love to cook. We center many events around cooking and celebration ! 

The entire Mugnaini oven idea came about while Nick and I were doing a remodel for some friends down in Aptos, CA. 

We noticed this really cool Red Mobil oven unit on the street while working down there. Long story short ... we tried to open a restaurant in downtown Lodi but kept hitting obstacles and when he decided to check into the Mobil oven unit instead, it happened to be the same owner of the red one we had been seeing for the past year in Aptos.

It was fate. We ended up finally purchasing one for ourselves and we have loved cooking and baking in it ever since. We just purchased our oven on April 30,2010.  Soon after we had 4 events booked. We did our first event last Sunday May 16th at Phillips Farms.  We cranked out 90 pizzas. We did our Pizza Margherita, Pizza Gorgonzola Onion, and Pizza Pesto Sausage.  It went over very well and the pizzas were a hit !!! Our specialty is the Pizza Margherita, but we can do just about any type.  We just did an intimate dinner for 12 on Friday evening May 21.We cooked almost the entire meal out of the oven. Appetizers started with some marinated Italian olives and a variety of plain to spiced nuts then grilled up our Margherita pizza : Fresh made mozzarella, fresh basil, San Marzano tomatoes that are pureed by hand for a fresh authentic tomato sauce, thin slivers of garlic and sprinkled with freshly grated Pecorino Romano cheese, then baked in the wood fired oven for just under 2 minutes... perfections ! Horsdouver we grilled strawberry and rhubarb the chilled and placed this mouth watering sweet combination over mixed greens and a balsamic vinaigrette, Main course was Prime cut of rib eye steaks , thin sliced potatoes rounds with fine diced rosemary& olive oil grilled to a perfectly toasted doneness and the veggies were a combination of asparagus, thin sliced fennel, and roasted baby artichokes braised with an olive oil herb base , then we topped the meal off with chocolate drizzled biscotti and cannolis dipped with mini chocolate chips and a cookie crumble ... the wine connoisseur paired each entry with a wine and ended with a port ...it was a yummy feast.

Our pizzas can be used as a meal or an appetizer... but just know it is very difficult to stop at just one piece !!!

Our dough is a recipe that Nick has been working on for many years. We lived out in the Clements area for almost 11 years and we had no air conditioning so in the summer we cooked outside on the BBQ most of the time. They did not deliver pizza out that far so we would make our own. Not only does he make his our pizza dough , he makes the most incredible French bread. We love to make most of our food by hand... we make our own mozzarella, bread rolls, French bread, tomato sauce, sausage, etc.

We run this business "a la Familia "My husband Nick, my self (Shelly ) and our son Nicholas. We are the Guantones, but our business is "Guantonio's". This is my husbands original family name. Nick has 3 brothers. All were born Guantonio's. His mom and dad changed their names before Nick was born. When I married Nick my dad's name is John Anthon... after 3 months of dating Nick informed me that his last name translated basically into the name John Anthon... Guan = John and Tonio = Anthon ... kind of crazy so.... we decided to make this "A La Familias"... all of the families !!!  Perfect name for the perfect business !!!
Nick and I love to entertain, make people comfortable, enjoy themselves and be with family and friends as much as possible. This is our way of celebrating with others and doing it " A mano con Amore"... By hand with love !!! "
